I'm suprised that you haven't tried it like that either. Chicken fried is about the only way I will eat duck. Unless I have had a few "adult beverages" and we through a few breasts on the grill stuffed with jalapenos and wrapped in bacon. In Texas we would chicken fry cardboard and cover it in gravy if we had to. Chicken fried steak is a staple in my house. And is available in just about every restaurant you step foot including Mexican food restaurants (smothered in queso and pico instead of gravy).

Chicken fried is one of the 4 basic food groups in Texas.

I like to marinate duck/goose cubed breast in an Italian Dressing marinade overnight, then wrap with a pepper(jalepeno, red/yellow bell, etc) and bacon. Skewer each one with a toothpick and grill on low anywhere from 10-12 minutes checking regularly as to not overcook or burn the meat.

They'll be a lot of "fire" from the bacon but man they come good!!!!!!!

Another thing my dad has started to do is with all the duck/goose legs is pan sear them and then throw em in a crock pot with BBQ sauce or Hot wing sauce. They come out pretty tender..............

Damn, getting hungry. Keep those recipes coming.

Coot- thanks for this it was a hit the other night. We had a load of teal and fried some and grilled some, this was perfect the tenders - my son called them McDuckit's.
