It's different, Its easy, but what the hey. All females Love it
Take your Favorite BBQ Sauce and add some Raspberry Perserves.
Umm Good
Heck, Just slap it on a Biskit(I know misspelled)

I dunno but will try it--Thurs I smoked and canned a bunch of goose and dux--some with BBQ sc and some without- going to be nice for quick lunches next fall.

I have always made my own barbecue sauce the same way but with half barbecue sauce and half honey.

On Wed we are serving brisket for our Solstice party(an AK tradition) and today i cleaned up my cooker-cut some mesquite chunks and made a batch of Rub, Mopping Sc., and BBQ Sc. for the occasion. On Mon I'll defrost brisket- tues I'll rub it ,and Wed cook it for about 12-14 hrs.-Low & Slow

i thought about that too.the electric smoker is the chit,the temp control and timer make it a no brainer. :appledance:

Get your hands on some old orange or grapefruit wood, The flavor is sweet and smooth without the bite of hickory.

Wish I'd of seenthese posts before this -- Heck we always have enough for a few more mouhs--off to Texas for hogs and mesquite when weather breaks-- last night it was an elk top round cooked 5 hrs in smoke cooker and served with basting sc- BBq- and fixins-- still can taste it.

SCoot,

You mentioned Carolina sauces in your Ribs post. I have to ask, western, eastern or south? There is such a varied difference in Carolina and the sauces.
I have found over the years that a great citrus marinade first and then add the smoke does the thing that I like.
I have a receipe for a KC sauce that is spicy hot and somewhat sweet that we use on beef and domestic pork.

North Carolina is divied when it comes to sauces. The eastern part of the state uses a vinegar based style and the western a tomato sauce. South Carolina uses a mustard base.

we're back now and had some fun in Texas and some good eats also. Hog hunting was slow but friends caught 5 in pen-- easy way but eating all the same.
