Default Jerky directions/recipes?

I've got some HUGE greater Canada geese that I sliced into thin, with-the-grain strips for making jerky. I need some recipes and directions....never made it myself. I figured oout that jerky or ground into smoked sausage was all them humongous ones are good for...can't even hardly cut the raw meat with a knife.
